Grass Hay for our Bison

 We've been putting up hay for a few weeks now; and it's progressing along, except for the occasional rain delay.  These are the first of what will eventually be hundreds upon hundreds of bales to see our herd through the latter part of this year, as well as winter and spring, until they can once again start grazing from the ground.  Our animals only eat grass hay, and exclusively grass hay grown on our ranch.  Which makes our grass fed Bison taste like no other Bison!

Our Bison is at Marczyks!

We have some exciting news to share.  Marczyk Fine Foods in Denver has our Bison at both the 17th Ave. and the Fairfax stores!  Look for house-made sausages, meatballs and ground, all made from Eagle's Wing Natural Bison.  

Our family have been big fans of what Marczyk has been doing for local farmers and businesses for a long time, and it's a real privilege to have our tasty Bison in their stores.

Grass-Fed Bison Steaks back in stock soon!

Just a quick update on all of those 'Out of Stock' labels in our online store; we have a small harvest coming up later this month, and will be back in stock with all our tasty Grass-Fed Bison steaks everyone's been asking about.  We'll have them for sale online, and if you're in Lafayette, will be selling everything at the Buff Truck Friday June 28th from 4-7PM.  Contact us if you want us to hold an order aside for you to pick up at the Buff Truck.

Fresh Mint in a Bison Burger?

I planted 6 mint plants about 5 years ago, and now I have a backyard full of mint.  Which means I'm always looking for something new (other than mojitos!) to put mint in.  I continue to be amazed at how many things taste great with some fresh mint in them; some that you would expect (like greek yogurt) and some that you would not.  The other day on a whim; I chopped up some fresh mint (probably 12-15 leaves worth) and mixed them into 1lb of our ground bison.  Before they hit the grill, I added just a couple grinds of black pepper and a pinch of kosher salt on the top.  WOW is mint good in bison burgers!  Similar to the way mint complements lamb; it seems to team up well with the flavor of grass-fed bison   Give it a try and see what you think!

New Buff Babies

75 new babies so far and counting!
